Meatball Soup

I created this soup just after Cassie was diagnosed with diabetes.  I hope you all like it as much as we do.

Most the measurements below are approximate.   If you don't have a large pot divide this recipe in half.

4 yams
1 small bag of shredded cabbage
1/2 cup of lentils (rinsed)
medium onion
meatballs (depending on size about 15-25) Here's what I use
2 T. garlic powder
2 t. basil (I like to use fresh when I have it)
2 T. onion powder (substitute for whole onion if desired)
15-18 chicken bouillon cubes
15-18 cups of water

Dice up yams and onion and add all ingredients together.   Cook on low for about 3-4 hours.  I serve this with either the Rhodes rolls or garlic bread.

  1. Greetings,
I wondered if there is a way to contact you so that I can ask a few questions, especially regarding the boys journal I'd purchased. We school year-round, so our journal requirements are slightly different. ;)

I apologize for posting the question here, but I've not been successful at locating any point to contact you.

    Most appreciative,
    Sheila
